Basically, this connect between Rick and Morty and GoT is in reference to what happens to Jon Snow at the end of the show. While Jon started the series as a man of the Night’s Watch, he is ending the show on a similar note as he dons the black once again.
A Reddit user just compared it with an episode of Rick and Morty where they play Roy’s Life – an arcade game. Morty, as Roy, beat cancer. Following that, he went back to his old job at the carpet store. Similarly, after everything was over, Jon Snow is back at Castle Black once again.
